Chocolate Fondue

A beloved party favorite, chocolate fondue is a decadent treat that, unfortunately, can wreak havoc on your blood sugar levels and waistline. Our healthier Chocolate Fondue swaps out heavy cream and high-calorie chocolate chips for coconut milk, puréed cashews and cacao powder to make a heart-healthy, lip-smacking fondue. Indulge in our Chocolate Fondue with strawberries, pineapple, or your favorite dippable.

Makes 12 servings. Total preparation time: 5 minutes

Ingredients:

1 ½ cup coconut milk
1/2 cup coconut oil, melted
1/4 cup plus 1 tablespoon cacao powder
1 cup soaked and drained cashews or almond (soak nuts in clean water for 1­2 hours)
1/2 tablespoon decaf coffee powder or espresso powder
1/2 cup dates
2 tablespoons honey, molasses or evaporated cane juice
1/2 teaspoon vanilla extra
1 pinch salt

Directions:

1. Add all ingredients in a high-speed blender and puree until smooth and creamy. Can make ahead and warm in a double boiler or in the microwave for 30 seconds until desired consistency. Enjoy with fresh strawberries, raspberries, pineapple, peaches, kiwi or sliced apple.
