This decadent mixture of pecans, pumpkin and maple is the perfect antidote to fall’s chill. Plus, it’s a winning way to enjoy the delicious flavor of a pumpkin treat without all the added sugar and calories. Serve our Pumpkin Maple Pecan Butter with sliced apples, on toast or pancakes, or swirl it in breakfast oatmeal for an extra serving of vegetables in the morning.
Makes 12 servings. Total preparation time: 5 minutes
Ingredients
2 1/2 cup raw pecans
3 teaspoons pumpkin spice
1/3 cup coconut oil
3 tablespoons maple syrup
3 pitted dates or 3 tablespoons date pieces
1/2 teaspoon vanilla extract
1 can pumpkin purée
Directions:
1. Place all ingredients into a food processor. Purée until smooth. Divide and serve with diced pecans on top, if desired. Can be refrigerated, covered, for up to 10 days. Enjoy!
