Coconut Milk Whipped Cream

This makes a great alternative to store bought cream.  Coconut is good for Adrenal fatigue, Raynaud’s syndrome, Thyroid cancer, depression and healing HPV.  It is also a great anti-bacterial and anti-viral food.  The taste is delicious and the health benefits are numerous.  Treat yourself to a dollop of this divine blend on top of berries, with a latte, or with your favorite fruit cobbler.  I hope you enjoy this, it’s one of my favorites.  Getting back to real food is a great way to heal your body & it can be fun!

Ingredients

2 cans full fat coconut milk

1/2 tsp grated ginger

1 tsp Manuka honey (or raw honey)

Lemon juice from 1/2 lemon

1 tsp lemon Zest

1 tsp ginger Zest

1/2 tsp organic vanilla

Directions

1. Scoop out the solid milk from the can and place  mixing bowl.  You can discard the liquid that remains.
2. Grate or Zest your Lemon & Ginger into the mixing bowl.
3. Add the lemon juice and vanilla.
4. Whisk  to a full fluff and enjoy!
